Roquefort is one of the greatest of all French cheeses. Our Roquefort from Fromagerie Janier is EVEN CREAMIER now. Janier has recently matured their Roquefort in the traditional way called, we kid you not, "pissing away the moisture".
It's a method to mature the cheese in a slightly higher temperature, which makes the Roquefort sweat, removing more liquid and leaving the paste more creamy and with a stronger kick.
