Olives that come only from the area surrounding the town of the same name, Castelvetrano, in Sicily. An intense green in colour and round in shape, their flesh is hard and dense, with a very delicate and fruity flavour.
The Castelvetrano Olives come from the province of Trapani, a stretch of green land just a few kilometres from the sea, where the temples of Selinunte have protected them for over 2600 years. These olives are harvested in late September, before they are ripe, when the flesh is crunchy and the fruits are bright green. Round in shape with firm flesh, Castelvetrano Olives are characterised by a mild flavour with mild saltiness.
