Le Georges is a modern cheese with deep roots in the city of Lyon, France. It resulted from a collaboration between fifth-generation affineur Fromagerie Janier and Brasserie Georges, the oldest brewery in the city.
This washed-rind cow’s milk cheese is bathed in Brasserie Georges’ dark ale and aged for about a month. The frequent washing helps form its striking, brain-like folds and its distinctive sticky orange rind.
Beneath that rind lies a creamy, ivory paste with a pungent aroma. The flavour is rich, with notes of fermented fruit and a hint of hops.
Le Georges is for the seasoned cheese lover looking for something truly memorable. Set it on the table and it’ll have people talking long after the last bite.
