We love asking our cheese friends, "What's your favourite cheese?", and Klavers Roem is one of the gems that came up.
Roem is produced by the Klavers family, third-generation cheese and dairy farmers in Winkel, North Holland. The milk comes from their own herd, grazing on pastures just a few kilometres from the cheese dairy. The farm's proximity to the North Sea and the freshwater IJsselmeer creates mineral-rich, salty clay soil that nurtures especially tender grass, and it's this natural terroir that gives their milk, and in turn Roem, its pure, rich, creamy character.
Aged for just forty weeks, Roem delivers a surprisingly robust sweet and nutty flavour reminiscent of burnt toffee all wrapped in a stunningly creamy texture with a lingering complexity.
