 September’s Cheese of the Month is a traditionally made cheddar - the only one made in the town of Cheddar, Somerset by the Cheddar Gorge Cheese Company.

Gough’s Cave Aged Cheddar is made with raw cow’s milk from one local farmer, freshly delivered to the dairy each morning. Each truckle hand-turned every two weeks, rubbed down and vacuumed to get rid of loose mould. 

As the original makers of cheddar once did, The Cheddar Gorge Company matures their cheeses in Gough’s Cave, just up the gorge from the dairy. The climate in the cave is perfect for cheese maturing: constant eleven-celsius temperature and high humidity, regardless of the season. The environment and natural minerals in the cave gives the cheeses their unique flavour and texture.

Gough’s Cave Aged Cheddar has a beautiful craggily texture, just like the walls of the caves itself. Aged for around 14 months, it is satisfyingly sharp with savoury and mineral notes. This is a classic traditional clothbound cheddar at its best!
