This small Burgundian cheese is a top candidate for the top ten most pungent French cheeses. Its a classic cow's milk cheese that is washed in Marc de Bourgogne, a local Burgundy alcohol, similar to Grappa. Epoisses is salty and runny, with a mild bite, and its at its best when ripe enough to dunk your bread in its luscious, succulent ooze. The combination of salt and alcohol help make this cheese a creamy, sweet, pungent, grassy, barnyard-y, spreadable complex cheese.

    This is the best cheese i have tasted from so far. Like the soft & creamy texture with very mild bitterness at the end. It goes well with red wine and sourdough crispbreads
