Cornish Kern is a handmade hard cheese made by Michael and Margaret Horrell of Lynher Dairies Cheese Co., Cornwall, England from the pasteurised milk of Pengreep herd. The name 'kern' (Cornish for 'round') aptly describes the well-rounded flavour profile of the cheese. As described by their maker, this cheese is firm to the cut, slightly flaky in the middle, and buttery with caramel notes and a deep savoury aroma.

A longer maturing cheese than Yarg, it develops over sixteen months within its handsome black wax coating. Originally derived from a Gouda style cheese, Alpine starter cultures are added to give it individuality and to create a close texture which resembles Dutch and French/Swiss cheeses.
