Cornish Kern is a handmade hard cheese made by Catherine Mead of Lynher Dairies Cheese Co. in Cornwall, England.
Aged for at least 20 months and using lightly pasteurised milk from their Ayrshire herd, the Cornish Kern is derived from a Gouda style cheese, they add nutty Alpine starter cultures to create its close texture. They then scald the curd to encourage Kern’s caramel notes and then pressing it into large, round moulds.
Kern being the Cornish word for round - this cheese is round not just in shape but also in flavour. It is a smooth and well-rounded cheese with bright, nutty sweetness and rich depth of flavour and fudgy texture resulting from the lengthy maturation process and Alpine-like make of the cheese.
