Cornish Brie comes from a relatively new cheese maker, Cornish Cheese Company, which started in 2001, in Cornwall, England. After 20 years focusing on their signature Cornish Blue, they opened a new cheese making facility to create this bloomy rind soft cheese, using the same high quality full fat milk from cows from their farm and the surrounding area.
Cornish Brie has a white bloomy rind with a creamy yellow paste thanks to rich Cornish milk. This soft cheese has a wonderfully dense bite with full flavours of milk - much like drinking a warm glass of luxuriously rich milk.
