After hearing the story of this yummy blue cheese, your thoughts on mould might change forever!

Bleu d'Auvergne is a popular blue cheeses from France, commonly found in markets everywhere together with Saint Agur and Roquefort.

What makes Bleu d'Auvergne special is its origin in using Bleu powder during its production to attain a uniform network of blue veining throughout the cheese. Before the invention of this powder, the quality of blue cheese was dependent on the luck and skill of each dairy farmer.

This method (and hence Bleu d'Auvergne) was created in the 19th century by Antoine Roussel whose background working in a pharmacy enabled him to invent Bleu powder from.... MOULD OF DECAYING RYE BREAD, which was later found to contain our favourite friendly mould Penicillium Roqueforti. (Truth: If you love cheese, you love mould!)

The result is an incredibly silky and creamy white moist paste, with pleasant (not too strong) flavours of wood, mushroom and sweet cream.... It's buttery and moist, a delight for people new or already familiar to blue cheese.

Unlike ones found in supermarkets, our Bleu d'Auverge is made in small batches and starts with raw milk which gives an unmistakable complexity and terroir to the cheese. Pairs beautifully with sweet wines like Sauternes.
