Noticing there were no milder blue cheese made in the British Isles and none at all made in Ireland, Louis and Jane Grubb started making their iconic Cashel Blue in the 1980s on their 200-acre farm in County Tipperary, Ireland, using milk from their own herd and other local dairies.

An easy-eating blue cheese with a mild blue tang and mineral undertones. It has a pleasantly buttery texture and a balanced amount of blue veining which adds a lift to the rich paste.
