Schallenberg is an Alpine cheese created by cheesemaker Hansruedi Gasser, who also produces Emmentaler. As the quantity of Emmentaler AOP allowed to be produced are restricted, he uses the same milk to create this cheese.
The Schallenberg is matured for 12 months, giving it a golden brown colour with a fine and smooth texture. Expect tastes of cauliflower with vanilla and toasted nuts.
