Opening the wax paper, you'll be instantly engulfed in its cheesy funk from the rind. The paste is straw-coloured and gummy. Biting into it, it is mild, briny and luxuriously chewy. Be sure to include a bit of the rind with every bite for a delicious contrast of both taste and texture. Think of it as Brie de Meaux, with a bit more bite!
