As the name suggests, Salers Tradition is an ancient cheese made in the Auvergne region of France with history dating back 2,000 years. 
 
An increasingly rare cheese, Salers Tradition is made purely from the milk of Salers cows bred by only a dozen producers. The cheese can only be made during the summer months and it must also be made in the traditional wooden gerle. What makes the process even more complex is the Salers cows will only express milk in the presence of their calves.
 
The Salers cheese looks as old as its history with its craggly rind but the inside is a pristine marbled yellow paste. The cheese has bold, beefy, savoury flavours, accompanied with what we can only describe as "wine-y"!
