La Tour de Paul, literally "Paul's Tower", is a newly created cheese from a famous cheesemaker Paul Georgelet. It is a raw goat's cheese from Deux-Sèvres, that bastion of celestial goat cheese, made by one of its best cheesemakers.
This cheese is a beautiful and perfect example of goat cheese, with an intense and slightly acid palate, creamy, salty, sweet, goat, herbaceous and floral.
We recommend pairing it perfectly with champagne or Viognier as a table cheese, it is also ideal melted on roasted potatoes or melted to flavor soups.
