The Hornbacher cheese is produced by the passionate master cheesemaker Michael Spycher at his cheese dairy Fritzenhaus in Wasen. In addition to the world champion cheese “Le Gruyère”, Michu (how Michael’s called by his friends) has been producing this speciality for 25 years. Up until 2014, he and his wife Monika sold this cheese just in their own little cheese store. The nutrient-rich milk comes from the surrounding hills and gives the cheese a very special flavor profile, which is a little stronger and spicier than Gruyere. This is the basis for the high quality of Michu’s cheeses. This mountain cheese has been cared for with love and ripens in his cellars to develop the unique rind and taste.
