Halloumi is the famous traditional semi-hard white cheese of Cyprus which has been produced on the island for centuries. It’s a folded cheese prepared from cow’s, sheep’s and goat’s milk and then rolled in wild mint and soaked in brine. This makes it possible to store the cheese for long periods, despite the islands hot climate.

It has a high melting point and so can easily be fried or grilled. Halloumi is set with rennet and is unusual in that no acid or acid-producing bacterium is used in its preparation.

The Cheese Shop recommends having haloumi grilled next to your steaks in your next barbecue session. Excellent on its own or in a fresh bed of salad once grilled or pan fried, optional with olive oil, lemons and fresh herbs.
